These have become a staple in the house since I have discovered the versatility of lentils….
Ingredients
1 teaspoon peanut oil
2/3 cup finely chopped onion
1 small clove garlic, minced
2/3 cup dried lentils, rinsed
1 tablespoon taco seasoning, or use my recipe below
1 2/3 cups vegetable broth
2/3 cup salsa
LR’s Taco Seasoning
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper
Directions
Heat oil in a skillet over medium heat; cook and stir onion and garlic until tender, about 5 minutes.
Mix lentils and taco seasoning into onion mixture; cook and stir for 1 minute.
Pour broth into skillet and bring to a boil. Reduce heat to low, cover the skillet, and simmer until lentils are tender, 25 to 30
minutes.
Uncover the skillet and cook until mixture is slightly thickened, 6 to 8 minutes. Mash lentils slightly if you wish.
